Stracchino is famous for its capability to adapt to a wide variety of salty recipes: sandwiches, pies, pasta dressings. Thanks to its delicate flavour, this soft cheese can also turn into a key ingredient to make many desserts, such as this delicious version of the classic apple cake.

Ingredients (8 to 10 servings)
- 300 g white flour
- 170 g Stracchino (room temperature)
- Minced parsley (to taste)
- 2 sweet apples
- 3 eggs
- 130 g granulate sugar
- 80 ml seed oil
- 1 teaspoon vanilla flavouring
- 1 bag of baking powder
- 1 teaspoon powdered cinnamon
- A pinch of salt
- A knob of butter
- Cane sugar (to taste)
- Powdered sugar (to taste)
How to make it
- Pour the eggs and the sugar in a bowl, add a pinch of salt and whip everything with an electric whisk until you obtain a foamy mousse.
- Add Stracchino and keep whipping.
- Pass the flour through a strainer and add baking powder.
- Add the mixture of flour and baking powder to the mousse that you obtained before; add seed oil, vanilla flavouring and cinnamon; keep whipping with the electric whisk until you obtain a soft, smooth dough.
- Butter a baking pan with a diameter of 24 cm and pour the dough in it.
- Preheat the oven at 180°C.
- Cut the apples in thin slices, lay them radially on the surface of the dough and sprinkle some cane sugar on everything.
- Bake for about 45 minutes at 180°C in the oven (non-ventilated).
- Take the cake out from the oven and let it cool down. Once at room temperature, cover it with powdered sugar.
