Ingredients (4 servings)
- 230 g Ricotta
- 120 g whipping cream
- 180 g raspberries
- 4 tablespoons powdered sugar
How to make it
- Wash the raspberries carefully, then mix them with an immersion blender until you obtain a soft purée. If you don’t have a blender, you can crush them patiently with a fork. Keep some raspberries aside to decorate the servings.
- Add Ricotta and powdered sugar to the raspberry purée and mix until you obtain a soft cream.
- Whip the cream with a whisk. Keep some cream aside to decorate the mousse later and add the rest to the mixture. Stir to blend it with the other ingredients with a spatula. Move the spatula from the bottom to the top of the bowl to keep the mousse soft and foamy.
- Pour the mousse into dessert cups and leave them to rest in the refrigerator for about one hour.
- Decorate each serving with whipped cream and raspberries.
