This type of Parmigiano Reggiano is left in the maturation room for over 4 years, to ripen and acquire a rich, complex flavour. Only the best, flawless wheels can endure such a long period of maturation, and not every dairy factory can obtain such a result. We do!
It can be tasted plain and without other ingredients, even as a fine snack between meals, or accompanied by other precious foods such as chestnut honey or balsamic vinegar.
