Parmigiano Reggiano was specifically created to last for long periods of time, but this is almost… ridiculous! 80 months of maturation represent an almost 7 years journey through time.
Do you remember what you were doing 7 years ago? Our Parmigiano does! It still was high quality fresh mountain milk back then. Then it was transformed by the hands of experienced cheesemakers; then it took its time resting and ripening in our cool warehouse in order to concentrate its flavours and bring them all out, and finally tell you all their story backwards, with every bite you take.

Crumbly, intense, nourishing and easy to digest. 80 months old Parmigiano is a “meditation cheese”. Cut it into thin shreds and enjoy it plain or with chestnut honey and a good glass of raisin wine.
