When a cheese is completely natural and totally free of additives, preservatives and food colouring, even its rinds are edible!
There are several ways to consume such precious leftovers. The grandmothers of our valley used to put them in vegetable soups or add them to Pasta e fagioli (Pasta with beans). Cheese rinds make soups and pasta dishes tastier, as they soften and become easy to eat. You can also bake, grill, pan-fry or cook them on an open fire to turn them into a crunchy, delicious appetizer.
