A great second course, rich and easy to make. It can be served warm or cold, so it is perfect for summer. Our tasty smoked Scamorza will add a touch of healthy energy and taste to a dish that is already enriched by the genuine flavours of cereals and vegetables.

Ingredients (4 servings)
- 150 g pre-cooked pearled spelt*
- 120 g smoked Scamorza
- 150 g tomatoes (small varieties, e.g. cherry tomatoes)
- 2 mid-sized courgettes
- 100 g mixed salad
- EVO oil (to taste)
- Oregano (to taste)
- Salt (to taste)
How to make it
- Pour the spelt (cool or warm) into a bowl.
- Wash and dice the tomatoes.
- Wash the salad and cut it in thin stripes.
- Cut the Scamorza in tiny cubes.
- Wash the courgettes, cut them in slices or round slices and sauté them in a pan with oil and salt for a few minutes.
- Mix the spelt with tomatoes, courgettes, salad and Scamorza.
- Season with oil, salt, oregano and other spices according to your taste.
* Canned pre-cooked spelt is ready to be seasoned and consumed; if you want to use dried spelt, you will have to rinse it, then leave it to rest into cold water for about 8 hours then boil it into salt water for 20-30 minutes before making the salad.
