Here’s an interesting “trick” to enhance the sweetness of our Crema Catalana by creating a pleasant contrast with the fresh, slightly sour flavour of lemons.
Decorate the dessert with slices of lemon, candied zests or seasonal fruit to give it a memorable appearance!

Ingredients (4 servings of Crema Catalana)
- 2 egg yolks
- 100 g granulated sugar
- 30 g butter
- 2 lemons
How to make it
- Grate the lemon peels, squeeze the lemons and place the grated peels and the juice in two separate containers.
- Whip the eggs and the sugar with an electric whisk for a few minutes, until you obtain a soft, smooth cream; then add the lemon peels and juice.
- Melt the butter in the microwave oven or on the stove over low heat for a few seconds.
- Add the melted butter to the mixture of eggs, sugar and lemon and cook everything in bain-marie for a few minutes (keep the heat low to keep the sauce soft and smooth).
- Let the sauce cool down and serve in a separate bowl, or spread a thin layer of it on the caramel crust of each serving of Crema Catalana; decorate according to your taste.
