It is a thin, fresh, briefly matured salame made with the same cuts of lean and fat pork used for famous products such as Prosciutto and Culatello.
The name might come from “Strolga”, a dialect word for clairvoyant, since farmers used to observe the results of its manufacturing process to guess how the maturing of the other cured meats would go. Thanks to its small size and soft texture, it is easy to carry around everywhere for picnics or quick aperitifs and snacks. It has a more delicate taste than salame, therefore it goes well with white sparkling wines.
