Mascarpone is a sweet, high-energy cream cheese, often used to prepare spreadable creams and desserts, and especially a popular one like Tiramisu. It can be used to make salty recipes, too: cheese mousse, canapés, pasta, risotto, vegetable pies and crepes.
Unlike other cheeses, Mascarpone is prepared by thickening the milk with citric acid instead of rennet, therefore it is suitable for those who follow a vegetarian diet.
