According to popular beliefs, the name “Stracchino” may come from “stracco”, a word meaning “tired” in many dialects spoken in the northern regions of Italy, since this cheese was made with milk from cows that were tired from being driven from a pasture to another. Unlike them, we never grow tired of making it, since it is a fresh cheese, easy to digest, with a pleasant, slightly sour taste, perfect to spread on bread, Focaccia or Piadina, together with cold cuts or vegetables, for a light, nourishing meal.
