Culatello and Fiocchetto are both made with pork hind leg. The first comes from the bigger, fatter cut; the second is made with the remaining part, which is smaller and leaner. Fiocchetto has a characteristic aroma and a more delicate flavour than Culatello; it is quite popular as an appetizer, yet it can be an excellent afternoon snack as well.
