As the name suggests, “Pancetta” (from “pancia”, i.e. “belly”) is a cold cut made with pork belly; it is labelled as a PDO product in the province of Piacenza. It consists of one layer of white, sweet fat and one of pink, savoury lean meat. Once salted and seasoned with spices, the meat is rolled to create a unique “vortex” of taste.
Pancetta is perfect to serve plain, cut in thin slices on bread, but it also can add flavour to any kind of recipe: crispy cubes of Pancetta are perfect for tasty first courses (To be fair, Amatriciana sauce should be made with pork cheek, but sometimes such ingredient is quite hard to find…); it also can be rolled around lean meats or even served with fish.
