Description

Coppa is a very popular cold cut in the area around Parma and Piacenza. It is made exclusively with pork neck; the meat is salted, spiced and stuffed into natural pork casing. It has a pleasant red colour with white veins, an intense flavour and a dry texture. Well matured Coppa can be sliced into thin, transparent slices and served as an excellent appetizer or second course, along with homemade bread or, better yet, with warm Torta Fritta (a local speciality that consists in sliced and fried bread dough).
