Description

Cut yourself a nice slice of taste! Tosone is a by-product of the first phases of the manufacturing of Parmigiano Reggiano. Once a wheel is removed from the cauldron, right before the salting process begins, it is placed in a mould that is supposed to give it its typical shape: at that stage, the edges of the wheel need to be trimmed to remove the cheese in excess; yet, the removed parts are too good to go to waste. So, they turn into thin, firm, delicate cheese sticks that can be enjoyed raw, or breaded and fried.
