Ingredients (4 servings)
- 8 mid-sized eggs
- 2 mid-sized courgettes
- 200 g Mozzarella
- 5/6 tablespoons grated Parmigiano
- 6/7 tablespoons grated bread
- Salt (to taste)
- EVO oil (to taste)
- Pepper (to taste)
- Minced parsley (to taste)
How to make it
- Wash the courgettes and cut them in thin round slices.
- Chop the Mozzarella in dices.
- Break the eggs into a bowl and add Parmigiano, grated bread, salt and pepper, then stir until you obtain a smooth mixture.
- Add courgettes and mozzarella to the mixture and stir.
- Pour 2 or 3 tablespoons of oil in a non-stick frying pan.
- Pour the mixture into the pan and cook over medium heat for about 5 minutes; wait until the edges of your Frittata become golden brown.
- Turn the Frittata upside down in a dish, then turn it again and put it back in the pan to cook the other side. If necessary, pour some more drops of oil in the pan before you put your Frittata back in.
- Cook over medium heat for about 4 more minutes.
- Add some minced parsley and let the Frittata cool at room temperature for a few minutes.
