Parmigiano Reggiano was probably invented about a thousand years ago, as an ingenious solution to prolong the preservation of milk: a food renowned for being rich in vitamins, proteins and minerals that are essential to human well-being. The long maturation of Parmigiano transforms and concentrates such nutritional properties, thus making them available also for people who can’t digest milk or just prefer to benefit from its virtues by biting it instead of drinking it… To make our Elisir, we use a combination of different types of Parmigiano, each one at a different level of maturation, especially created to obtain a mixture that is not too sweet nor too savoury.

Elixir of long life
Extra virgin olive oil is the symbol of Mediterranean diet. It has been well known and used for thousands of years, not just as a condiment but also fuel, preservative substance, medicine, main ingredient for ointments and perfumes, etc. In more recent years, science has proven its healthy properties, as well: it is rich in “good” fat acids, polyphenols and vitamins, which help protecting the heart and slow down aging processes: a proper elixir!

Grated, mixed and smoothed
To prepare our Elisir we grate Parmigiano, then we pass it through a sieve and mix it mechanically with olive oil. In order to obtain the right texture and make the oil blend perfectly in, we also pass the Elisir through a smoothing device, just for the time needed to make it creamy and foamy without making it lose the typical grainy texture of the cheese. The Elixir is perfect as it is: spread on a slice of bread, used as a seasoning for vegetables, soups, roulades etc; still, to allow you to taste it on different occasions, we also add chilli pepper, truffle, hazelnuts, olives or capers to the main ingredients and create several tasty variations.
